Partial profits to be donated

Hook’s Cheese Co. will sell you a pound of the old cheddar for just $209.00. But don’t think the price is greedy. Tony and Julie Hook are giving half the profits, nearly $40,000 to the Center for Dairy Research.

"The dairy center has done so much good," Tony Hook told Wisconsin State Journal. "They're helping future generations and even our generation now."

“It’s really saying something that he took care of this cheese for 20 years,” Steve Ehlers of Larry’s Market added.

Hooks says he won’t make more of the product but there may be some “10-12-year old” cheese in the works.

Experts say a cheese that intense will be best "in tiny increments, like a truffle would be." All but 20 pounds of the cheese was pre-sold with the rest going on sale at the shop.

“Isn’t it exciting that there’s so much interest in a product that is hand-crafted like this?” Hooks commented. “We live in a special place.”
